Ingredients
- 1.5 oz vodka
- 1 oz fresh lemon juice
- 0.5 oz fennel syrup
- 3 oz tonic water
- Ice
Fennel Syrup:
Sugar:Water = 1:1, add 1 teaspoon fennel seeds. Simmer over low heat for 3–4 minutes, cool and strain.

Tools Needed
- Cocktail shaker
- Jigger
- Fine strainer
- Bar spoon
- Highball glass

Instructions
1️⃣ Shake — 10 sec
Add the following to a shaker:
- vodka
- lemon juice
- fennel syrup
- ice
Shake gently until completely chilled.
2️⃣ Strain — 5 sec
Strain into a highball glass filled with ice.
3️⃣ Top — 3 sec
Add tonic water and stir gently.
4️⃣ Garnish — 5 sec
Twist lemon zest and add a pinch of fennel frond.

Tips & Notes
- Fennel has a very niche flavor, crisper than star anise, with a hint of natural sweetness.
- If you don't like it too sweet, reduce the fennel syrup to 0.25 oz.
- For a more Mediterranean feel, add 1 drop of orange blossom water.
- If you want a non-alcoholic version, omit the vodka and use cold-brewed fennel tea with a tonic.
- This menu is perfect for an aperitif or pairing with seafood.
