Fennel Lemon Tonic

Ingredients

  • 1.5 oz vodka
  • 1 oz fresh lemon juice
  • 0.5 oz fennel syrup
  • 3 oz tonic water
  • Ice

Fennel Syrup:
Sugar:Water = 1:1, add 1 teaspoon fennel seeds. Simmer over low heat for 3–4 minutes, cool and strain.

1️⃣ Shake — 10 sec
Add the following to a shaker:

  • vodka
  • lemon juice
  • fennel syrup
  • ice
    Shake gently until completely chilled.

2️⃣ Strain — 5 sec
Strain into a highball glass filled with ice.

3️⃣ Top — 3 sec
Add tonic water and stir gently.

4️⃣ Garnish — 5 sec
Twist lemon zest and add a pinch of fennel frond.

Tips & Notes

  • Fennel has a very niche flavor, crisper than star anise, with a hint of natural sweetness.
  • If you don't like it too sweet, reduce the fennel syrup to 0.25 oz.
  • For a more Mediterranean feel, add 1 drop of orange blossom water.
  • If you want a non-alcoholic version, omit the vodka and use cold-brewed fennel tea with a tonic.
  • This menu is perfect for an aperitif or pairing with seafood.
