Ingredients (for 1 12-inch pizza):

Dough:

  • 2 cups (250g) all-purpose flour

  • œ tsp salt

  • Ÿ tsp instant yeast

  • Ÿ cup (180ml) warm water

  • 1 tbsp (15ml) olive oil

Tokyo-Style Sauce:

  • 3 tbsp (45ml) soy sauce

  • 2 tbsp (30ml) mirin

  • 1 tsp (5g) sugar

  • œ tsp (2.5ml) sesame oil

  • 1 tbsp (15ml) ketchup

  • œ tsp grated ginger

Toppings:

  • 3 oz (85g) shredded mozzarella

  • 2 oz (60g) thinly sliced shiitake mushrooms

  • 1 oz (30g) cooked teriyaki chicken or tofu

  • œ oz (15g) chopped scallions

  • Drizzle of Japanese mayo (optional)

  • Nori strips (dried seaweed) for garnish


Instructions:

  1. Prepare the Dough:
    In a mixing bowl, combine flour, salt, and yeast. Gradually add warm water and olive oil, mixing until a soft dough forms. Knead for 5–7 minutes. Cover and let rise for 1 hour or until doubled in size.

  2. Make the Sauce:
    In a small saucepan, combine soy sauce, mirin, sugar, sesame oil, ketchup, and grated ginger. Simmer for 2–3 minutes until slightly thickened.

  3. Preheat the Oven:
    Fire up your Skycorps Cyber Pizza Oven to around 750°F (400°C). It takes just 15–20 minutes to reach optimal heat.

  4. Assemble the Pizza:
    Roll out the dough on a floured surface to 12 inches. Spread a thin layer of Tokyo-style sauce, then add cheese, mushrooms, teriyaki chicken or tofu, and scallions.
  5. Bake:
    Slide the pizza onto a preheated pizza stone or directly onto the grill surface. Bake for 90 seconds to 2 minutes until the crust is golden and crisp.

  6. Garnish & Serve:
    Add a drizzle of Japanese mayo and sprinkle with nori strips. Slice and enjoy immediately!
