Ingredients (for 1 12-inch pizza):
Dough:

2 cups (250g) all-purpose flour

½ tsp salt

¾ tsp instant yeast

¾ cup (180ml) warm water

1 tbsp (15ml) olive oil
Tokyo-Style Sauce:

3 tbsp (45ml) soy sauce
-
2 tbsp (30ml) mirin
-
1 tsp (5g) sugar
-
½ tsp (2.5ml) sesame oil
-
1 tbsp (15ml) ketchup
-
½ tsp grated ginger
Toppings:
-
3 oz (85g) shredded mozzarella
-
2 oz (60g) thinly sliced shiitake mushrooms
-
1 oz (30g) cooked teriyaki chicken or tofu
-
½ oz (15g) chopped scallions
-
Drizzle of Japanese mayo (optional)

Nori strips (dried seaweed) for garnish
Instructions:

Prepare the Dough:
In a mixing bowl, combine flour, salt, and yeast. Gradually add warm water and olive oil, mixing until a soft dough forms. Knead for 5–7 minutes. Cover and let rise for 1 hour or until doubled in size. -
Make the Sauce:
In a small saucepan, combine soy sauce, mirin, sugar, sesame oil, ketchup, and grated ginger. Simmer for 2–3 minutes until slightly thickened. -
Preheat the Oven:

Assemble the Pizza:
