- 50 ml gin
- 25 ml fresh plum purée
- 20 ml fresh lemon juice
- 15 ml simple syrup
- 1 egg white
- Garnish: plum slice or lemon peel

Instructions
1️⃣ Dry shake — 20 sec
Add gin, plum purée, lemon juice, simple syrup, and egg white into a shaker without ice. Shake hard to build foam.
2️⃣ Shake with ice — 25 sec
Add ice and shake again until well chilled.
3️⃣ Strain — 15 sec
Double strain into a chilled coupe glass.
4️⃣ Garnish — 10 sec
Top with a plum slice or express a lemon peel over the foam.
Tips & Notes
- Ripe plums give better color and natural sweetness.
- If using plum juice, reduce simple syrup slightly.
- Egg white adds a silky texture but can be skipped.
- Works well with London Dry or floral gin.
