Single - Bottom Pizza Crust Recipe

I. Time Required
  1. Ingredient Preparation Time: 5 minutes
  1. Dough Fermentation Time: Approximately 1 - 1.5 hours (depending on ambient temperature of 82.40-89.60℉)
  1. Crust Making Time: 10 - 15 minutes
Total Time: Approximately 1 hour 20 minutes - 1 hour 50 minutes

II. Ingredients
  1. 150 grams of high - gluten flour
  1. 50 grams of low - gluten flour
  1. 3 grams of yeast
  1. 15 grams of granulated sugar
  1. 2 grams of salt
  1. 15 ml of olive oil
  1. 100 - 110 ml of warm water

III. Preparation Process
  1. Yeast Activation: Put the yeast into warm water, stir well, and let it stand for 5 - 10 minutes until rich foam appears on the surface, indicating that the yeast has been activated.
  1. Ingredient Mixing: In a larger container, mix the high - gluten flour and low - gluten flour evenly. Then add granulated sugar and salt and stir well again. Next, slowly pour in the activated yeast water and olive oil, and stir into flocs with chopsticks.
  1. Kneading Dough: Pour the flocculent dough onto the countertop and knead it vigorously. Knead the dough for 10 - 15 minutes until it becomes smooth and elastic and can be stretched into a thin film (i.e., the expansion stage).
  1. Fermentation: Put the kneaded dough into a container smeared with a little olive oil, cover it with plastic wrap. Place it in a warm and humid place for fermentation. The fermentation time is about 1 - 1.5 hours until the volume of the dough expands to twice its original size. You can test by poking a hole in the middle of the dough. If the hole does not retract, it means the fermentation is complete.
  1. Degassing and Shaping: Take out the fermented dough and place it on the countertop. Gently press to release the gas. Knead the dough into a round shape, and then roll it into a round pizza crust of a suitable size for the pizza pan with a rolling pin. Put the crust into the baking pan and evenly pierce some small holes on the surface of the crust with a fork to prevent the crust from bulging during baking.
