Cooking Steps
  1. Make the dough: In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for 5 minutes until the yeast activates and becomes foamy. In a large bowl, mix all - purpose flour and salt. Pour in the activated yeast mixture and olive oil. Stir until it forms a shaggy dough, then knead it into a smooth ball. Place the dough in a bowl coated with olive oil, cover it with plastic wrap, and let it rise in a warm place for 1 hour until it doubles in size.
  1. Prepare the sauce: Peel and chop the tomatoes, and mince the garlic. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant. Then add the chopped tomatoes, dried oregano, black pepper, and a pinch of coarse sea salt. Simmer over low heat for 15 minutes until the sauce thickens. Let it cool.
  1. Assemble and bake: Take out the risen dough and roll it into a round pizza crust on a floured surface. Transfer it to a pizza pan or baking sheet. Spread the cooled tomato sauce evenly over the crust, and lay fresh basil leaves on top. If using mozzarella cheese, tear it into small pieces and scatter them over the sauce. Preheat the pizza oven to 220°C (430°F) and bake for 12 - 15 minutes until the crust edges turn golden and crispy.
